I actually tried these while in Italy last year, and found the recipe because I liked them so much. This serves 4
Spinach and Ricotta Patties
1 lb fresh spinach 8 oz ricotta cheese 1 egg beaten 2 tsp fennel lightly ground 1/2 cup finely grated romano or parmesan cheese 1 oz all purpose flour(mixed with 1 tsp dried thyme) 5 tbsp butter 2 garlic cloves minced salt and pepper
Wash and trim spinach, put in pan, cover and cook for about 4 to 5 minutes.
Mash ricotta, stir in beaten egg, salt and pepper, seeds, and cheese.
Drain and chop spinach, and mix in the mixture. Flatten the mixture (about 1 tbsp balls) and roll in flour.
Bring water to a boil, and add the patties, when they float to the top take them out.
Melt butter in a pan, cook patties for 2-3 minutes, pour garlic butter on patties, and serve.
