ok, you're going to have to trust me...this is different, but it pleased even our "picky" family member; in fact, he liked it the best of all of us. We will be having it again very soon, as we always have these ingredients on hand, and it was very easy and really good!
Asian Salmon Roll Ups
2 cans salmon, drained and flaked
1 can Mandarin oranges (I used mandarin pieces, saved me from having to cut it up further :-))
4 or 5 finely chopped green onions
3 tablespoons peanut butter
1/4 cup low-sodium soy sauce plus 2 tablespoons, divided
1 tablespoon fresh lemon juice
4 cloves garlic, pressed
1 teaspoon ground ginger
a few drops of hot pepper sauce (like Louisiana)
4 whole wheat tortillas (7 inch)
2 tablespoons rice vinegar
Drain oranges and reserve liquid.
Place the salmon in a medium bowl. Add green onions, peanut butter, 1/4 cup soy sauce, lemon juice, garlic, ginger, and hot pepper sauce and mix well. Fold in orange pieces.
Spread salmon filling on each tortilla, roll it up and serve. (I cut them in half, on the diagonal)
In a small bowl, combine remaining 2 tbsp soy sauce, 2 Tbsp reserved mandarin orange liquid, and 2 tbsp vinegar; mix well to be served as a dipping sauce.
