My mom found this recipe years ago. She calls it Flam-Baked Chicken.
Vinegar* Soy sauce 3 large bay leaves* water 2 lbs chicken** Medium to large skillet with lid
Take a regular-size coffee mug and fill it half way with vinegar. Add 3 to 4 tablespoons of soy sauce and bay leaves. Fill the remainder of the mug with water.
Season chicken to taste. Place chicken in a medium to large skillet with lid and pour on vinegar mixture.
Cook on a medium flame (between 5 and 6 for electric stoves) for 1 hour while stirring every 15-20 minutes. Cook 15 minutes longer if you desire the chicken to literally fall off the bone.
*You may also add or subtract vinegar and or bay leaves to your taste.
**This tastes best when you use boneless chicken breasts or chicken wings.
I find this dish to be very, very good. I normally serve this dish with Rice a Roni or Greens.
