I have never brined a turkey either but those who have say they're wonderful and juicy. I would imagine yours will be delicious!

Mexico at Christmas sounds terrific. I know you will have a great time. DH and I tried, a few times, to talk the girls into going some place warm for Christmas but they would never agree:-( Sigh...
