Hi Everybody!
It's easy to make a meal out of a store-bought rotisserie chicken. I buy mine Mojo Style at Publix, my favorite grocery store! Their Greenwise Market magazine was in today's mail and I got inspired to make today's dinner by looking at a picture in the issue of a delicious looking plate of salad greens mounded with sliced peaches and strawberries and grapes with sliced grilled chicken breast alongside of it with a little cup of honey-lime dressing.
Now it's too hot for me to be grilling in my backyard these days as summer winds down and I am on the look-out for easy and refreshing as well as healthy dinners. But I figured rotisserie chicken would do the trick and all I had to make was the honey-lime dressing. I used Spring Greens instead of the greens in the recipe and blueberries instead of grapes. Yumm!!!
For dessert, I will be serving Jell-O brand sugar-free rice pudding.

GRILLED HONEY-LIME CHICKEN SALAD serves 4 source: Publix Greenwise Market, Aug 2008
FOR THE DRESSING: 1/2 cup plain low-fat yogurt 1/3 cup lite dairy sour cream 2 Tbsp. organic honey 1 1/2 tsp. finely shredded lemon or lime peel 1/4 tsp. salt 1/4 tsp. fresh ground black pepper FOR THE SALAD: 2 small heads Boston or Bibb lettuce, torn 2 medium peaches, peeled, pitted and sliced 1 cup halved strawberries 1 cup halved seedless grapes 4 medium boneless, skinless chicken breasts 1 tsp. lemon-pepper seasoning
FOR THE DRESSING: In a bowl mix together the sour cream, yogurt, honey, lemon or lime peel, salt and pepper. Cover and chill.
FOR THE SALAD: Line 4 salad plates with lettuce. Top with peaches, strawberries and grapes. Cover and chill until serving time.
Sprinkle chicken with lemon-pepper seasoning. Grill chicken on the rack of an uncovered grill directly over medium coals for 12-15 min or until chicken is tender and juices are not running pink. Let stand for 5 min.
TO SERVE: Fiagonally slice the chicken breasts into slices. Arrange warm chicken slices with each salad. Serve salad with dressing. |
