The only 3 ingredients you need for real, Southern pimento cheese are cheese, pimento and mayonnaise.

There is no specific recipe with amounts of each ingredient. Every family likes their pimento cheese made for their own taste - so feel free to experiment.

Use grated Velveeta instead of cheddar, and always add more pimento than your recipe calls for (add til it feels right), and always use "real" mayonnaise. In addition, let it sit in the refrigerator at least overnight so that your flavors will meld.

For those who haven't made pimento cheese yet, the cheese will soak up the mayonnaise pretty quickly if you use cheddar, so you'll have to add more mayonnaise almost every day until it is gone. The Velveeta isn't as dry as cheddar, so that isn't as much of an issue.

You can eat pimento cheese on any kind of cracker, in a sandwich, or use it to "stuff" raw vegetables. Celery stuffed with pimento cheese is a great flavor addition to any meal, so always keep some on hand.
