How about something such as a chicken breast stuffed with wild rice and wrapped in phylo dough. Serve with a creamy chicken gravy or bishmael sauce. I make these quite often and don't really have a "receipe" they lend themselves well to whatever you have on hand or would like to add. You bake the chicken breast and prepare the rice ahead of time. Then assemble each package and just pop into the oven to brown when you are ready.
A really nice idea for the holidays is to stager 3 sheets of phylo on top of each other so that you have a star effect with the corners each pointing a different way. Then gather all of the phylo at the top to look like a present. Then tie the whole package with a blanched leek stem so that it looks like a present with a bow. Paint the phylo with an egg wash and pop into the oven until browned. This makes a really stunning presentation and looks like you spent a lot more time than you did. While I myself love any type of seafood - my hubby is just the opposite. I think you would be playing a risky game if you only serve something "seafoody".
