Hi Linda, Had to stop for a dinner break, but I'm back and ready to type the recipe you requested the upside down cakes. Hints and tips...l box of yellow cake mix will yield about 12 individual Pineapple upside down cakes I use regular size cupcake papers, "smash" them flat, and lay my mini cakes on them when they're done...this makes a nice presentation..and it's sanitary. You can bake these in either "aluminum" or buy mini pie pans...I have used both. and both work equally well, but in either case lightly grease sides of pie pans here goes.. MINIATURE PINEAPPLE UPSIDE DOWN CAKE 1 BOX yellow cake mix 12 pineapple slices 6 maraschino cherries - cut in half 12 tsp. light brown sugar 12 tsp. melted butter (if you use margarine, make sure it's 70% or more fat) Prepare cake mix according to package instructions. Grease sides of "tins" in each pan place 1 tsp. butter/margarine sprinkle l tsp. brown sugar over butter place pineapple with cherry half in "hole" bake at 350 about 15 minutes, or until cake spring back gently when touched. Don't overbake... Flip over immediately on cooling rack....store covered after completely cooled.
