Teri Beef
Marinate thinly sliced beef in: 1/2 Cup Shoyu (Soy Sauce) 1/2 Cup Sugar Few slices of Ginger Few Cloves of Garlic, minced Splash of Sake
Grill or broil *** The amounts of marinating ingredients may be done according to taste!
Chicken Katsu: (for 4) 4 Chicken Breasts (boned and skinned) Flour Salt Pepper 2 Eggs Panko (Japanese Bread Crumbs)
Flatten the chicken a little, and salt and pepper both sides. Place flour in a dish, eggs (beaten) in another dish, and the panko in a third dish. Dredge the chicken in flour, then eggs, then panko and deep fry on medium high heat until cooked (panko will get browned. Let rest for a few minutes, then slice and serve, on sliced cabbage if desired.
For the sauce I like a blend of Catsup and A-1 Steak Sauce. I also have seen Tonkatsu sauce served. A blend of Catsup and Worcestershire Sauce could also be used.
As for the grilled mahi, many different ways to grill it are used. You could use a "Shoyu-Sato" sauce (shoyu and sugar with garlic and ginger -- similar to the teri beef marinade), or flour it and fry it. It would really depend on your taste.
