It was a great success! Menu as follows (if recipes needed, post a request) Cocktails: beer, wine, 2 punches (one with vodka and one with gin) Appetizers: steak on skewer, melon and shrimp salad, pea and crab in celery, pineapple wrapped in ham Salad: fancy lettuce, macadamia nuts, avocado, shrimp, mandarin oranges and homemade dressing with poppyseed base Pilaf Chicken kabobs Oven roasted pork ***superb, can't fail recipe (25 lb cooks 16-18 hours) Fruit salad I never could have done this without the ideas that I found on the internet, especially at this site! We had the appetizers served which cut down on the amount and the variety needed (like at a wedding). We had a local Polynesian dance group perform while we were dishing up the food. We formed a serving line and served each person at their tables-that way we knew exactly how much of everything to make (especially kabobs). It went unexpectedly smoothly.
