This is my daughter's recipe: For the pasta we use tortellini stuffed with cheese. I made this for a Greek Feast in Santa Barbara and it was a big hit.
TOMATO GREEK PASTA SALAD
1/4 cup lemon juice 3 cloves garlic 1 1/2 teas. chopped fresh basil, or 1/2 teasp. dried basil 3/4 teasp. salt 1/2 teasp. pepper 3/4 cup olive oil 8 ounces pasta, shells or other pasta 2 pounds tomatoes, (about 4 large), peeled, seeded and diced 1 1/2 cups celery 1 cup cucumbers, peeled, seeded and sliced 1 cup sliced black olives 4 ounces feta cheese, crumbled 2 teasp.fresh chopped parsley
Combine lemon juice and next 4 ingredients. Beat in oil. Place all chopped vegetables and put in a large bowl. Pour dressing over vegetables and pasta, gently folding. Chill.
