Sorry, but I can't possibly choose just one! I could live very happily just eating appetizers. I love all shapes, sizes, levels of fanciness (is that a word?), etc.
I have to admit that the old standby Hot Crab Dip (with the cream cheese and cheddar on top) might be THE favorite. I also love blue cheese and puff pastry nibbles, so another very favorite is one that combines the two, a recipe I first read about a long time ago in a Julia Child cookbook. I've posted the recipe for "talmouses" previously on this site, and they are really easy to make (and freeze ahead).
Here is another family favorite that I could sit and eat until I explode - again, easy but wonderful.
Shrimp Spread
16 oz. cream cheese 1 TBL very finely minced onion (scallions work well, and you can use more) 2 TBL ketchup 1 TBL Worchestershire sauce 1/2 tsp. cayenne 1/2 tsp. black pepper 1/2 tsp. salt 1/2 tsp. tobasco 1 lb. shrimp, cooked, peeled and deveined, and minced (frozen can be used for this one - just squeeze of excess moisture)
Combine all ingredients until very well combined. Place in a decorative mold, if desired, or into a crock for serving. Allow flavors to blend for several hours in the refrigerator (overnight is best). Serve with crackers.
