Marty, here are a couple recipes that are easy and very good.

Fresh Fruit Pie

Crust
1/4 cup margarine
1/4 cup sugar
1 egg yolk
1 cup flour

Filling
1/2 cup sugar
3 tablespoons cornstarch
1 1/2 cups orange juice
1 tablespoon grated lemon rind
6 cups fresh fruit (I prefer a mixture of peaches, strawberries, blueberries and bananas)

CRUST: Cream margarine to soften. Mix in sugar and egg yolk. With pastry blender or fork mix in flour until crumbs form. Press firmly into a 9 inche pie plate or 9 inch springform pan. Bake in 400 degree oven for 8 minutes or until edge is browned slightly.

FILLING: Meanwhile, in saucepan, mix sugar and cornstarch. Gradually stir in orange juice until smooth. Stirring constantly, bring to a boil over medium heat and boil for 1 minute. Remove from heat; stir in lemon juice and grated lemon rind. Cool completely. Fold in the cit up fruit, drained. Turn into cooled crust. Turn into cooled crust. Chill for 4 hours. Serves 8.
RHUBARB STRAWBERRY DESSERT
Don't let the rhubarb turn you off. This is good. Raspberries may be used in place of strawberries.

3 cups flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 cup butter
1 cup buttermilk
2 eggs, slightly beaten
1 teaspoon vanilla
1 recipe rhubarb filling
3/4 cup sugar
1/2 cup flour
1/4 cup butter

RHUBARB FILLING;
In a saucepan, combine 1 13 ounce package frozen unsweetened rhubarb, cut into 1 inch pieces. And 1 16 ounce strawberries (or raspberries)sweetened and thawed. Cook fruit, covered for about 5 minutes. Add 2 tablespoons lemon juice. combine 1 cup sugar and 1/3 cup cornstarch; add to rhubarb mixture. Cook and stir 4-5 minutes until thickened and bubbly. Cool.

In a mixing bowl stir together the 3 cups flour, the 1 cup sugar, the soda and baking powder. Cut in the 1 cup butter to fine crumbs. Beat togethr buttermilk, eggs and vanilla; add to the dry ingredients. Stir to moisten. Spread half the batter in a greased 13X9X2 inch baking pan. Spread cooled filling over batter in pan. Spoon remaining batter in small mounds atop filling. Combine remaining sugar and flour; cut in 1/4 cup butter to fine crumbs. Sprinkle crumbs over batter in pan. Bake in 350 degree oven for 40-45 minutes. makes 12-15 servings. Serve hot or cooled.

Don't let the length of this frighten you. It is actually easy to make.
