Hi, Christine - good luck with your party. It sounds elegant.

Maybe look for some flavored creamers to offer along with half-and half. There should be a number of varieties in the milk section of your grocery store.

There are also syrups made for adding to coffee - check your local coffeeshop, or the coffee section of your store. I love caramel syrup in my coffee, for instance.

Maybe whipped cream, though I guess that red and white can wouldn't look particularly elegant sitting on your table.

My sister-in-law who wants to be Martha Stewart bought a package of those bridge sugars (you know, lump sugar shaped like the card suits), and sorted out just the clubs for her St. Patrick's Day party - since this is for a rehearsal dinner, you could sort out just the hearts.
