While looking for other cookie recipes in my loose cookie recipes file, I came across these cute bunnies that reminded me of your Brownie Pop post...perhaps these would work on a stick for Easter?? I think they eed to be kept in the refrigerator but the end of the recipe is cut off, so I am not sure. I do remember they were VERY rich.

BAKER'S BUNNY BROWNIES

4 squares Baker's Unsweetened Baking Chocolate
3/4 cup (1 1/2 sticks) butter or margarine
2 cups sugar
3 eggs
1 teaspoon vanilla
1 cup flour
White Chocolate Coconut Frosting (recipe follows)
Assorted Cake Mate Dessert Decorations

Heat oven to 350. F. (325 for glass dish) Line a 13x9 pan with foil extending over edges to form handles. Grease foil. Microwave chocolate and butter in large microwavable bowl on high 2 minutes or until butter is melted. Stir until chcolate is completely melted. Stir sugar into chocolate until well blended. Mix in eggs and vanilla. Stir in flour until well blended.Spread in prepared pan. Bake 30-35 minutes or until toothpick inserted in center comes out with fudgy crumbs. Do not overbake. Cool in pan. Run knife around edge of pan to loosen brownies from sides. Lift from pan onto cutting board, using foil as handles. Frost with White Chocolate Coconut Frosting. Refrigerate brownies 10 minutes to set frosting. Cut into squares or cut into festive Easter shapes such as bunnies using cookies cutters.

WHITE CHOCOLATE COCONUT FROSTING

1 stick butter, softened
1 cup powdered sugar
2 Tablespoons milk
3 squares melted Baker's Premium White Baking Chocolate
1 1/3 cups Baker's Sweetened Flaked Coconut(1/2 a 7 oz. bag)

Beat butter, sugar and milk in medium bowl with electric mixer on low until well blended. Increase speed to medium and beat 30 seconds until smooth. Beat in melted white chocolate. Stir in coconut. Frost brownies. Sprinkle remaining coconut over brownies after they have been frosted and cut, if desired.

TIPS FOR DECORATING BUNNY SHAPES:
Use Cake Mate decorating icings or gels to draw bunny eyes, nose and mouth. Use Cake Mate rainbow decors to create outline for clothing, (vests, bow ties, etc) then use assorted colored crystals to fill in the designs. Use sugar coated gumdrops cut into shapes to create carrots and leaves.
