Donna ~ Another item that would be good for your party would be a tossed green salad. I would use head lettuce, leaf lettuce, fresh spinach, etc. Wash the items well and put them thru a salad spinner to remove the moisture (or pat them with paper towels. Break them in bite-sized pieces with your fingers. Do not use a knife, that will cause the greens to wilt.
Or, to save time and work, you can buy prepared bags of salad greens at most all grocery stores these days.
Put the salad greens in a lovely big bowl. Around the bowl, fix a combination of veggies from which guests can pick and choose to make their own salads. This is especially nice if you have guest with special dietary needs.
Some of the items you might have on the side could include the following:
crumbled fried bacon chopped ham, chicken and/or turkey pieces chopped scallions chopped red onion diced hard-boiled eggs shredded carrots chopped cucumber or zucchini chopped celery or chopped bok choy sprouts tomatoes (quartered or more, depending upon size) shredded or crumbled cheeses cheeses artichoke heart pieces mandarine orange bits sliced nuts croquettes
Have a variety of salad dressings available for your guests. You could use home-made or store-bought. There are many wonderful home-made salad dressing recipes here on the RecipeLink.
