Durango Chicken Wings
1 stick butter 1 Tbsp cumin 1 tsp paprika 2 tsp ground red pepper 4 lb. chicken wings
Preheat oven to 425. In small saucepan heat until melted the butter, cumin, red pepper and paprika. Set aside. Spray 2 large broiling pans with racks with Pam. Cut tips from wings and cut wings in 2 sections. Bake until brown on one side (@ 40 min.). Turn, then bake on other side till brown (@10 min.). Brush both sides with reserved butter mixture. Bake until crisp (@3 minutes longer). Yield: 40 appetizers. Serve with Cumin Cucumber Dip (below).
8 oz. sour cream 1/2 c peeled, seeded, and diced cucumber 1 T minced onion 1 t ground cumin 1 t salt
