Hi another post gave me an idea ...
My brother lives with me now and used to be a gormet cook so I take his word a lot so if I'm worng on the real basis of this please forgive, but it was good no matter the name.
He had me make a "Frittata" last month from leftovers -- it was GREAT!
Now for your reception you would not use leftovers but I'm sure you could find an awesome recipe here.
This is the basic of what I originally made .... I sautee'd up some lfetovers (mushrooms, bell peppers, onions meat, "stuff" and some thin sliced baby potatoes. Originally I was gonna just do a stir fry with potatoes -- hense the addition of potatoes ....
Put that in a square baking pan, then I layered one thin layer of thinly sliced tomatoes, sprinkled on some italian salad dressing, a bit of fresh assiaga or parmesean cheese.
In a sperate bowl I whisked up 4-5 eggs with a bit of itailian dressing and a bit more cheese, poured that mix over the pan of leftovers & tomatoes and baked the mixture maybe 20 on 400(?) only till golden and set it was and has been fabulous! Page
