Hi Patsy -- it is important for you to know that you should not freeze a sandwhich with mayonnaise.

We did pinwheel sandwiches for my wedding 20 plus yrs ago.
My mom was always freezing sandwiches this is my all time tip for you, thinly butter (soft margarine) both sides of the bread that helps to keep the filling from soaking the bread and the bread moist. Even peanut butter and jelly freeze well!

To make pinwheel sandwich you have bakery slice bread lengthwise -- thin -- (discard the crust) you then roll the long slice of bread with a rolling pin just one or rolls will do. Mom used to have them die the bread too but that is hard to get them to do today. We had a rainbow wedding and the sandwiches were pink, violet, yellow and bright green -- what were we thinking?? but ya know it was so pretty!

You then spread with thin layer of soft margarine, and whatever filling. Roll up each slice. kinda like a jelly roll.
Double wrap in plastic wrap; place in freezer. Wrap it tightly to prevent ice crystals.
The morning of the reception you remove from the freezer and with a sharp knife slice in 1/4-1/2 inch pinwheels.
Place pinwheels on trays (they will be frozen) loosely cover with clean wrap to prevent drying out and they will thaw in about an hour's time.
You can place them on doilies on the tray or on a bed of salad greenery.
pretty and EASY!

cream cheese and crushed pineapple
mashed shrimp with butter
olive and cream cheese
peanut butter and grape jelly
cream cheese is a great base for these.
Use your imagination and look at hose little jars of cheese spread by Kraft they are expensive but can give you ideas on what would taste good together.
And a little filling goes SOOOO far!
