It's true, mushrooms, cucumbers, tomato, olives and salami with cheese should only be marinated a couple of hours. We sometimes use toothpicks instead of kabobs for appetizers since people can try them without having to commit to the whole kabob! (Cut portions smaller for this.)
Fruit kabobs are also a pretty and fun way to serve fruit - pineapple, cantaloupe, apple and grapes make nice kabobs.
