I haven't tried these but they do sound good :-)
Taco Tartlets "The meat forms the crust and the tortillas are in the filling."
Tortilla Chip Filling (below) 1 lb. lean ground beef 2 Tbsp. taco seasoning mix 2 Tbsp. ice water 1 cup (4 oz.) shredded Cheddar cheese
Tortilla Chip Filling
1/2 pint. sour cream (1 cup) 2 Tbsp. taco sauce 2 oz. chopped ripe olives 3/4 cup coarsely crushed tortilla chips
Preheat oven to 425 degrees F.
Prepare Tortilla Chip Filling; set aside.
In a medium bowl, mix beef, taco seasoning mix and ice water with hands. Press into bottom of 1 1/2-inch miniature muffin cups, forming a shell. Place a spoonful of filling into each shell, mounding slightly. Sprinkle Cheddar cheese over tops.
Bake 7 to 8 minutes. With the tip of a knife, remove tartlets from pan. Serve immediately or freeze.
To serve tartlets, reheat in a 375 degree F (190 C) oven 10 to 15 minutes. Makes about 30 appetizers.
Tortilla Chip Filling:
Mix all ingredients in a small bowl.
Variation
For a main-dish pie, substitute a 9-inch pie plate for muffin cups. Bake in a preheated 375 degree F (190 C) oven 45 minutes. Makes 6 main-dish servings.
