I don't do eggs and ham for a group, so when it was my turn to do our morning coffee get-together or brunch this was my menu:
Coffee urn, light coffee blend various sweetners and creamers Tea bags, various in basket Coffee pot, hot water Had Apple cider and hot chocolate mixes (weren't needed) Sierra Mist
3 peach cobblers, (one as non-dairy as I could make it) Timed to come out of the oven when the party started 2 cold oven pound cakes (only need one) 1 strawberry angel food jello cake, diabetic style Deviled eggs-1 dozen Appetizer Platter of Chicken salad, wrapped in turkey slice, wrapped in leafy lettuce Cabbage soup, homemade--lite,low-sodium, low-carb
Served 39 Adults from 9 AM until 11:30 AM Not a drop-in party, slated to start at 9 AM. Most were attending by 9:15 AM.
Low carb dieters, diabetics, and just regular folks. Success! YES! Note: I did cheat and used a store-bought,plain angel food cake as a base for my strawberry angel food cake.
