SALSA DIP This is best made a day or two ahead and requires no heating! Keeps for up to two weeks in the fridge.
1 can diced tomatoes with green chilies 1/2 medium onion diced 2 Tbsp fresh cilantro chopped 2 Tbsp taco seasoning 2 Tbsp lime juice
Mix all ingredients together and chill overnight. You can omit cilantro if you can't find it.
BLACK BEAN SALSA
1 can black beans drained 1 can whole kernel corn drained 2 cans diced tomatoes with green chilies 3 Tbsp lime juice 4 Tbsp fresh cilantro chopped 1 medium onion chopped Mix together and chill overnight.Serve with tortillia chips!
QUICK CHEESE APPETIZER: Take 1 block of Cream Cheese, and pour 1 jar of hot pepper jelly over it serve at room temperature with good quality crackers.
QUICK DESSERT IDEA #1: Bake a cke of any flavor. Cool and break into bite sized pieces. Layer cake, Cool Whip, and pudding, any flavor to make a great triffle. I use butter pecan cake with vanilla pudding and sprinkle coconut and drained crushed pineapple between layers!
QUICK DESSERT IDEA #2 Buy a ready made pound cake like Sara Lee. Cut into bite sized pieces. Melt 1 package chocolate chips and 1/4 cup light Karo syrup. Dip cake into chocolate and cool on wax paper. Can be served, at room temp, refridgerated, or frozen.
IF YOU HAVE A FONDUE POT: 1 hour before guests arrive on stove over low to med low heat mely 1 bag choc chips, 2 Tbsp choc syrup and 1 tsp orange liquer. Pour into fondue pot when ready to serve and serve with cut fruit and /or large marshmallows, and /or pound cake pieces.
