HOT ARTICHOKE SQUARES
Makes (2) 13x9-inch pans

3 small onions, finely chopped
olive or vegetable oil
12 eggs
6 cups cheddar cheese, shredded
36 ounces artichoke hearts, drained and chopped
3/4 cup dry breadcrumbs
1/4 cup chopped parsley
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon dried oregano
1/2 teaspoon Tabasco sauce

Preheat oven to 325 degrees F.

In a skillet over medium heat, heat oil. Saute onion until tender and remove from heat.

In a large bowl, beat eggs. Stir in remaining ingredients, including sauteed onion. Divide evenly among pans.

Bake 30 minutes. Cool. Cover with a sheet of plastic wrap, pressing down to cling to food. Apply foil or foil/cardboard lid. Freeze.

WHEN READY TO BAKE:
Preheat oven to 350 degrees F. Remove pans from freezer and remove foil/cardboard lid and plastic wrap.

Bake until heated through (approximately 20 minutes).
