I have been in food service for years, and it can be simple yet elegant. If it is early in the day, how about fresh fruits, dips, danish etc.. If a little later, chaffing dishes are inexpensive to rent or buy disposables. It depends on what time of the year the wedding is, if summer, fresh fruits in season can make an elaborate buffet. If winter, you can try individual omelets extra that can be purchased at Gordon Foods, etc.. Planning the table with flowers, candles, etc.. can make hot dogs appealing. Use your own them and go for it. It can be done very inexpensive!!
