MARINATED MOZZARELLA1 pound mozzarella cheese, cut into thin 2-inch squares
1/4 cup olive oil
2 tablespoons finely chopped fresh parsley
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano leaves, crushed
1/4 teaspoon ground black pepper
Fresh basil leaves (for garnish)
Bagel chips or crackers (to serve)
Place cheese in a single layer in a 10 1/2x15 1/2-inch jelly-roll pan.
In a small bowl, whisk oil, parsley, garlic powder, onion powder, oregano, and pepper. Pour over cheese. Cover and refrigerate 8 hours or overnight to allow flavors to blend, turning slices occasionally.
Arrange slices on a serving plate; garnish with fresh basil. Serve with bagel chips or crackers.
Makes about 3 dozen cheese squares
