These have been a favorite of mine for years, they remind me very much of fall. The recipe makes a lot of cookies.
NORTHWOODS MAPLE NUT COOKIES6 cups flour
1 1/2 teaspoons cream of tartar
1 teaspoon baking powder
1 teaspoon salt
2 cups sugar
1 cup firmly packed brown sugar
1 1/2 cups margarine or butter, softened
1 cup oil
5 teaspoons
maple flavoring3 eggs
2 cups toasted, chopped pecans*
Lightly spoon flour into measuring cup; level off. In large bowl, combine flour, cream of tartar, baking powder and salt; set aside.
In large bowl, beat sugar, brown sugar, margarine, oil, maple flavor and eggs until well blended. Gradually stir in flour mixture; mix well, stir in nuts. Cover with plastic wrap; refrigerate at least 1 hour of until firm.
WHEN READY TO BAKE:Preheat oven to 375 degrees F.
Shape dough into 1-inch balls. Place 2 inches apart on ungreased cookie sheets. Flatten with bottom of glass dipped in sugar.
Bake at 375 degrees F for 8to 10 minutes or until light golden brown.
*To toast pecans, spread nuts on cookie sheet; bake at 375 degrees F for 6 to 10 minutes or until light golden brown.
No change over 3500 feet.
