Hi all, my name is Jessie and this is my first time posting here. I am planning a wedding for May '09 and we're on a pretty tight budget, paying for everything ourselves. We both have pretty large families and are both pretty friendly people :) and our guest list is approximately 120 people.

We would really like to cut money for a caterer. We're planning on doing an appetizer, hor d'ourve, dessert table. With so many people attending, I was HOPING that someone would be able to help me with "champagne recipes on a beer budget" I'd really like it to look nice and elegant and plentiful, instead of just large quantities and cheap.

Please, post any ideas that you may have. Any suggestions are welcome and truly appreciated. THANKS!!
