APPLE CINNAMON BREAD
1 cup plus 3 tbsp. sugar 3 tbsp. cinnamon
1/3 cup vegetable oil 1-1/2 cup milk
1 cup flour 2 apples
1/2 tsp. salt 1 tsp. baking soda
2 eggs 1/3 cup raisins or nuts
Preheat oven to 350 degrees F.
Grate apples; stir in baking soda and combine with 1 cup sugar,
cooking oil, flour, salt, eggs, 2 tbsp. cinnamon, and milk.
Pour into greased bread pan. Mix 3 tbsp. sugar with 1 tbsp.
cinnamon and sprinkle over loaf. Bake in preheated oven for 1 hour.

CRANBERRY-CHEESE BREAD
1 1/2 cups cranberries, cut in halves
1/2 cup sugar
2 1/4 cup sifted all-purpose flour
3/4 cup sugar
3 tsp. baking powder
1/2 tsp. salt
1/2 cup coarsely chopped walnuts
2 tsp. grated orange peel
1 1/2 cup finely shredded sharp cheddar cheese
1 egg, slightly beaten
1 cup milk
1/4 cup butter, melted and cooled
Rinse cranberries in water but do not dry.
Mix cranberries with 1/2 cup sugar until cranberries
are coated well. Sift flour, sugar, baking powder
and salt together into large bowl. Mix in sugared
cranberries, walnuts, orange peel and cheese.
Beat the egg, milk and butter together in separate
bowl. Add to dry ingredients; stir just until dry
ingredients are moistened. Turn into greased
9x5x3 inch loaf pan and spread evenly. Bake at
350 degrees F. about 1 hour or until bread tests
done. Cool 10 minutes in pan on wire rack; remove
from pan and cool completely before slicing. To
store, wrap and refrigerate.

ORANGE AND NUT BREAD
2 cups white flour
2 cups whole wheat flour
4 tsp. baking powder
2 tsp. salt
1/2 cup sugar
1/2 cup candied orange peel
1/2 cup pecans, finely chopped
1 egg, well beaten
2 cups milk
Preheat oven to 350 degrees F.
Mix dry ingredients well, add candied orange
peel and nuts. Add milk to egg and combine
the two mixtures. Stir until smooth, then
beat well. Pour into two greased bread pans
and bake for 45 minutes.
Makes 2 loaves.

WALNUT RAISIN BREAD
3 cups sifted all-purpose flour
1 cup sugar
1 1/2 tsp. salt
4 tsp. baking powder
1 cup chopped walnuts
1 cup raisins
1 egg, beaten
1 1/4 cups, milk
2 tbsp. melted shortening or oil
Preheat oven to 350 degrees F. and grease 9x5x3" loaf pan.
Sift flour, sugar, salt, baking powder into bowl. Add walnuts
and raisins. With fork beat egg with milk and shortening til
blended. Stir into flour mixture; blend thoroughly with spoon;
turn into pan. Bake 60 to 70 minutes, or until cake tester comes
out clean. Cool in pan 10 minutes before removing.
Let sit 24 hours before serving.

DATE AND NUT BREAD
2 cups boiling water 1 tsp. baking soda
1 cup chopped walnuts 1/2 tsp. salt
1 cup chopped dates 2 eggs
1 1/2 cup sugar 2 tbsp. butter, melted
3 cups flour 1 tsp. vanilla
1 tsp. baking powder
Preheat oven to 350 degrees F.
Pour boiling water over dates and nuts and let sit
until cooled. Mix all other ingredients together,
until blended well. Add the water/dates/nuts mixture.
Bake in a greased loaf pan for 1 hour.
