Recipe: Pina Colada French Toast
Breakfast and Brunch Pina Colada French Toast (this is from "Lean and Luscious and Meatless") 1/3 cup pineapple juice, 1/4 t. coconut extract, 1 egg white, 2 slices bread (1 oz. slices), 2 t. reduced-calorie margarine, 1 t. shredded coconut (unsweetened), Sauce: 1/3 c. pineapple juice, 1 t. cornstarch, 1 t. sugar, 1/16 t. coconut extract, In small bowl, blend juice, extact and egg white with fork. Pour mixture over bread in shallow pan and turn to coat. Melt 1 t. of the margarine in preheated non-stick skillet or griddle. Sprinkle half the coconut in the pan and add the bread. Sprinkle the bread with the remaining coconut and dot with remaining margarine. Cook until lightly browned on both sides, turning several times. While toast is browning, prepare sauce: In small saucepan, combine juice, cornstarch and sugar, mixing well to dissolve cornstarch. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil 1 minute, stirring. Remove from heat, stir in extract and cover. (I do this in the microwave .. 6 minutes, watching for boil-over - use at least 2 c. deep container.. 4 cup is safer re boil-over.) My son and I love this. The sauce is wonderful, we think ... can use any juice so variations are endless and leftovers thicken like pudding, which I like on its own.Hope you enjoy,Katja
