Here's one--it's not a real quick recipe but it is good.
Ingredients: 1 cup chopped, seeded and juiced ripe plum tomatoes, 2 Tablesp.
olive oil, 2 teasp. minced garlic, 2 tablesp. minced FRESH basil, 2-3 tablesp.
vodka, 1/4 cup light cream, salt and pepper to taste. Saute garlic and basil in olive oil for about 2-3 minutes. Add tomatoes and cook for about 20 minutes. Add vodka, salt and pepper. Let cool then puree in blender (a hand blender works great for this if you have one!) Heat in saucepan and then add light cream. Serve over penne. Makes about 1 1/4 cup sauce.
