Ellen's gravy is a great recipe, although sometimes after fixing sausage patties the children ask for gravy and this is a simple recipe to follow: 3 Tabls. oil from skillet, 1/2 tsp. salt, 1/4 c. flour, 1 tsp. pepper, 1 cup milk: Heat oil in skillet. Stir in flour, salt and pepper. Let flour brown, then stir in milk. Cook until thick and smooth. Serve with hot biscuits. ( I sometimes use cornstarch in place of flour, use about 1/8 c. instead of 1/4 and dissolve it in small amount of cold water before adding. This makes a smoother gravy.) The next recipe I'm going to share you will probably think I'v lost my mind, but try it before you pass judgement! CHOCOLATE GRAVY... 3 Tabls. cocoa (heaping), 3/4 c. sugar, 1 Tabls. flour, 2 cups milk. Mix cocoa, sugar and flour in a skillet; stir in milk. Cook on med. heat until mixture thickens, stirring continously. Serve with hot biscuits and butter. It's also good on pancakes. Trust me, my husband and father-in-law were ready to get out the "butterfly nets" until they tasted it, and now ask for it all the time. Good Luck! Janie
