We love this one but if there are left-overs,
I always refrigerate, because it doesn't seem
to stay fresh otherwise.

Corn Bread just like "Marie Callenders"

3/4 cup yellow cornmeal
2 1/4 cups flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
3/4 cup (1 1/2 sticks) unsalted butter, melted
(If you use salted butter, eliminate the -- 1/2 tsp. salt.)
3 eggs -- beaten
Preheat oven to 400 degrees. In a large bowl measure cornmeal, flour, sugar, baking powder and salt and blend well. Add milk and melted butter slowly. Pour in eggs and stir just enough to blend thoroughly. Pour into greased 9x9" baking pan.
Bake 20 minutes or until toothpick inserted into bread comes out clean. Remove from oven and turn out onto a rack to cool. This freezes extremely well.
Muffin tins or mini-loaf pans could be used.

NOTES : This is very rich, more like bread or cake than traditional cornbread. It tastes just like Marie Callenders. Delicious hot from the oven, and spread with honey butter.
