Jo: Somewhat similar to the recipe Betsy has posted. As a sidelight....This is Aunt Lena's recipe..she was Amish, a distant relative(very distant ),played the saw as a hobby ( now thats a story in itself .:] ) and died at 93 several years ago. In any case here it is..ENJOY

Makes approximately 10-12 dozen

FASNACHTS
2 C Mashed potatoes
2 C Potatoe Water- warm (saved from boiled pots. )
1 C Sugar
2 Pkgs.Yeast-dissolved in small amount of warm pot.water
Mix and let rise for 1 hour

Add to:
Batter made of:

1 C Sugar
1 C Butter
1 T Salt
2 Eggs
Mix with:
5 lbs of Flour ( More or less )

Rise until double in size

Roll ( about 1 1/2 - 2inchs thick ) and cut in 4 inch squares.

Rise approximately 1 hr until Double

Fry in Lard ( oil i.e. Crisco may be substituted) & Drain

To serve:
May be dusted with powdered sugar BUT the Pa. Dutch preference is:

Split in half and serve with butter and Syrup ( Turkey or King Brand syrup)..molasses may also be used,but generally is not sweet enough.
