They are called "Malasadas." Here's a good recipe: Combine and set until bubbly 1/4 c. warm water 2 pkgs. yeast 1 tsp. sugar Combine all ingredients: 1 med. potato, diced & boiled 1/4 c. potato water (remaining water after boiling potato) 4 c. flour 1/4 c. sugar 3 eggs, beaten at room temperature 1/4 c. margarine, melted 1/4 tsp. salt 1 c. evaporated milk Knead until springy. Set aside to rise. When double in size, drop dough with ice cream scooper into hot oil. Deep fry until golden brown. Drain and roll in sugar and enjoy!!
