Dear Mary,
Here's a wonderful Indian side dish made with lamb.

Sagh

2 onions
4 tbsp. butter
2 lb. lamb
1 tsp. tumeric
2 tsp. coriander
3/4 tsp. ginger powder
1/2 tsp. chili powder
1 lb. spinach (you can use canned if you want as it's faster)
2 tsp. yogurt
pinch of thyme
1 tbsp mustard seeds
salt to taste

slice onions finely. fry in butter, add meat that has been cut into 2 1/2-inch cubes. at the same time add tumeric, coriander, ginger, chili. mix & fry on med. heat 10 to 12 min. add spinach that has been shredded fine over meat w/yogurt, thyme & mustart seeds, salt. mix tog. cook down to a thick puree. will serve 3 generously.
