Chocolate Zucchini Bread
Makes: 2 loaves

Sift together:
3 cups flour
1 tsp salt
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda

In separate bowl - beat slowly:
3 large eggs

Add and beat on high:
2 cups sugar

Mix in:
1 cup peanut or vegetable oil
2 oz. melted bitter chocolate
1/2 tsp almond extract
2 tsp vanilla extract
2 tbsp mayonnaise

Slowly add to flour mixture.

Fold in:
2 cups shredded zucchini
1 cup chopped pecans or walnuts.

Bake at 350 degrees 45-55 minutes in 2 greased bread pans. Cool 10 minutes and remove from pans.
