Jan, here is another one and vairations from The American Family Cook Book
Vanilla Blanc Mange
1/2 cup sugar 3 tbl cornstarch 3 tbl flour 1/4 tsp salt 3 cups scalded milk 2 beaten egg yolks 1 tsp vanills 2 egg whites, stiffly beaten
Mix sugar, cornstarch, flour and salt. Add milk and mix well. Cook over boiling water until thick, stirring constantly. Cover and cook 2 min. 15 min. longer. Remove from fire, pour on the yolks and cook 2 min. longer over boiling water, stirring constantly. Add vanilla. Fold in stiffly beaten egg whites. Pour into a mold or individual molds. Chill. Serve with chocolate sauce. Serves 6
Chocolate Blance Mange Add 1-1/2 squares melted, unsweetened chocolate to recipe above. Serve with whipped cream.Coffee Blanc Mange Substitute 1-1/2 cups strong coffee for equal quantity of milk in main recipe.
Strawberry Blanc Mange Add 1/3 cup crushed strawberries to the main recipe when cold.
Fruit Cornstarch Add 1/3 cup chopped fruit, one kind or a mix, to main recipe.
