SENATE BEAN SOUP
2 cups small navy beans
3 quarts water
1 ham bone or 2 ham hocks
1/2 cup mashed potatoes
3 onions, finely chopped
4 or 5 outside celery stalks, with leaves, chopped finely
1 clove garlic, minced
1/4 cup parsley, chopped
salt/pepper to taste

Soak beans overnight in water. Add ham, simmer 1 hour till beans begin to get tender. Then add potatoes and remaining ingred. Simmer 1 hour longer till beans are tender. Adjust seasoning. Makes 10 - 12 servings.
