This recipe can be made using either chicken or turkey and is absolutely fabulous! You can make the sauce while the chicken is in the oven. I always serve it accompanied by Fried Rice.
Hawaiian Sesame Chicken
2 pkg. boneless skinless chicken breasts, sliced fairly thinly--(can be sliced while still partially frozen to make the job easier)
1 C milk
Plain or Italian bread crumbs for breading
Salt and pepper for seasoning
20 oz. pineapple chunks-drained but SAVE the juice
3/4 C brown sugar
dash of ginger
1 T. dried onion flakes
1 Tsp. orange bits
Several generous "shakes" sesame seeds
Soy sauce to taste
Preheat oven to 400. Dip the chicken slices in milk and then in bread crumbs. Brown in melted margarine over medium heat. Season with salt and pepper and remove chicken to a baking dish. Place chicken uncovered in 400 degree oven for 20-30 minutes.
Sauce:
Add the reserved pineapple juice to pan drippings and stir. Add brown sugar, ginger, onion flakes, orange bits and sesame seed. Add soy sauce to taste. Cook until syrupy and then add pineapple chunks. Sauce may then be poured over chicken or served separately on the side.
Fried Rice
2 C cooked rice
1 stick margarine
4 eggs slightly scrambled and sliced into strips
1 small can sliced water chesnuts-drained
1 small can sliced mushrooms-drained
3-4 stalks thinly sliced celery
6-8 sliced green onions
1/2 box frozen snow peas (or use fresh!)
soy sauce to taste
In a large skillet, melt margarine and let it start to brown. Add cooked rice, scrambled eggs, water chesnuts, mushrooms. Fry together adding soy sauce to taste until browned. Just prior to serving add celery, green onions and snow peas.
**You could always scramble the eggs and cook the rice in advance to really speed up the preparation of this dish. It is the best fried rice recipe I have ever encountered.)
