HAWAIIAN SESAME CHICKEN

"This recipe can be made using either chicken or turkey and is absolutely fabulous! You can make the sauce while the chicken is in the oven. I always serve it accompanied by Fried Rice."

2 pkg. boneless skinless chicken breasts, sliced fairly thinly (can be sliced while still partially frozen to make the job easier)
1 cup milk
plain or Italian-seasoned bread crumbs (for breading)
butter or margarine (for browning chicken)
salt and pepper (to taste)
FOR THE SAUCE:
1 (20 oz.) can pineapple chunks, drained (save the juice)
3/4 cup brown sugar
dash ground ginger
1 tbsp. dried onion flakes
1 tsp. orange bits
several generous "shakes" sesame seeds
soy sauce (to taste)
Fried Rice (for serving, recipe follows)

Preheat oven to 400 degrees F.

Dip the chicken slices in milk and then in bread crumbs. Brown in melted margarine over medium heat. Season with salt and pepper and remove chicken to a baking dish.

Place chicken uncovered in 400 degree F oven for 20-30 minutes.

Meanwhile, prepare the sauce:
Add the reserved pineapple juice to pan drippings and stir. Add brown sugar, ginger, onion flakes, orange bits and sesame seed. Add soy sauce to taste. Cook until syrupy and then add pineapple chunks.

Sauce may then be poured over the cooked chicken or served separately on the side. Serve with Fried Rice.

FRIED RICE

You could always scramble the eggs and cook the rice in advance to really speed up the preparation of this dish. It is the best fried rice recipe I have ever encountered.)

2 cups cooked rice
1 stick (1/2 cup) margarine (you may use less, or use oil)
4 eggs, slightly scrambled and sliced into strips
1 small can sliced water chestnuts, drained
1 small can sliced mushrooms, drained
soy sauce (to taste)
3 to 4 stalks thinly sliced celery
6 to 8 sliced green onions
1/2 box frozen snow peas (or use fresh!)

In a large skillet, melt margarine and let it start to brown. Add cooked rice, scrambled eggs, water chestnuts, mushrooms. Fry together adding soy sauce to taste until browned.

Just prior to serving add celery, green onions and snow peas.
