Walnut Chicken with Ham
Serves 6

2 cups chicken, diagonally sliced
OR
1 whole breast chicken, diagonally sliced
1 tbsp. soy sauce
1 tbsp. wine (alcohol will cook off for the kids!)
Salt
1 medium onion sliced or diced
1 cup frozen peas
1/2 cup sliced water chestnuts
2 slices luncheon ham, sliced into 2x1" pieces
3 tbsp. oil
1/2 cup walnuts, toasted

Slice and prepare ingred. Toast walnuts. Marinate meat in wine, soy sauce, and salt about 5 minutes.

Heat oil in wok to smoking point. Stir fry chicken & onions together 3 minutes more, lifting cover twice to stir ingred. Mix in ham and walnuts.

Note: If desired, almonds or cashews could be substituted for walnuts, or nuts may be omitted altogether.
