Robert, I too work full time, come home, pick up kids from softball crew and girl schouts! It ain't easy. I find that we all eat a lot better when I cook on Saturdays or Sundays for the week. Often I will make chili, a pot of soup, spaghetti sauce, and different marinated chicken breasts for the week and freeze what I don't need until later in the week. Tonight we are having a Low fat vegetable Lasagna. There is a good book out that I think is called "cook for a month" I used to have that I got from a Christian book store that breaks it all down into what you need to buy, what containers you need and what to do in what order. I am not quite that adventurous, but I do cook for one week at a time. A lot of times I will have chicken already cooked to add to cold chicken salads or throw together a quick stir fry. Good luck. If I try any Super Super recipes that freeze exceptionaly well, I'll get back to you.
