3 Medium Tomatoes, peeled and finely chopped
1/2 Onion, finely chopped
1-3 Cloves Garlic depending on your taste
2-4 Jalapeno peppers seeded and chopped
1/2 cup green Peppers, seeded and chopped
1 Tablespoon cider vinegar
1/2 teaspoon salt
2 teaspoons fresh cilantro, minced
1 Teaspoon Cumin
Hot sauce and paprika to taste


This can be made in a food processor but you must chop or process everything separately of the first thing you put in turns to mush.
If you don't have a food processor chop by hand. Mix all the ingredients in a none reactive bowl and leave refrigerated overnight for the flavors to develop. Stir occasionally.
This is a very good recipe and very close to real mexican salsa
