Here's a recipe from Taste of Home TOMATOES AND CUKES 2 Tbsp. olive oil or vegetable oil 1 Tbsp. vinegar 1Tbsp. minced fresh parsley 1/4 tsp. salt 1/4 tsp. pepper 3 medium tomatoes, sliced 1/2 large cucumber, sliced Leaf lettuce, optional In a small bowl, whisk oil, vinegar, parsley, salt and pepper. On a serving plate, arrange tomato and cucumber slices over lettuce, if desired. Drizzle with the vinaigrette This one is from an Augusta, Georgia cookbook FIRE AND ICE TOMATOES 6 large tomatoes, peeled and quartered 1 large green pepper, sliced in strips 1 red onion, sliced in strips 1 large cucumber, peeled and sliced 3/4 cup vinegar 1 1/2 tsp. celery salt 1/2 tsp. salt 4 1/2 tsp. sugar 1/8 tsp. pepper 1/2 tsp. red pepper 1/4 cup cold water 1 1/2 tsp.mustard seed or1 1/2 tsp. prepared mustard Reserve cucumbers and place all other vegetables in bowl. Prepare the dressing by combining all other ingredients in a saucepan and boiling for 1 minute. Pour hot dressing over vegetables in bowl and allow to stand until cool. Just before serving, add cucumber. Arrange on a platter.
