Baked Doughnuts

INGREDIENTS:
2 TBS Yeast 1/3 c. Water -- warmed 1 1/2 c. Skim milk -- at room temperature 1/3 c. Oil -- at room temperature 1/4 c. Granulated sugar 2 tsp Salt 2 tsp Nutmeg 2 Egg whites -- whipped 4 1/2 c. Unbleached flour 1/2 c. Egg white 1 c. Sugar with 1 tsp cinnamon
Preheat oven to 450F after first and second rise. To proof yeast, mix 1/4 cup. Warm. Brush each doughnut and doughnut hole with egg white and roll in the cinnamon sugar.
