I was going through some of the back dates and I spotted your request for an Australian rabbit recipe, posted on the 9th. June. I do not know if this is the one you are seeking, but this is the way it is usually cooked down here in Australia. It may be too late for for the day you wanted it, but perhaps you'd like to try it at a later date.

Rabbit casserole
Cut up 1 rabbit, soak in salt water for 1 hour. Place in basin, sprinkle with salt & pepper, pour over 1/2 cup white vinegar and let soak all night. Next day, put in saucepan; 2ozs melted butter, add 2 onions, cut into small pieces, a sprinkle of mixed herbs (your choice) 3 cloves, the rabbit and lastly the vinegar in which the rabbit soaked in all night, 1 tablespoon sugar and 1 cup water. Let whole simmer for 2 hours, stirring occasionally. Serve with apple sauce and your choice of vegetables.
