Make Ahead Pasta Sauce I always use this recipe when I buy a lot of tomatoes--it's great over pasta and freezes beautifully.
4 cups seeded ripe tomatoes, chopped 1 or 2 envelopes chicken broth base powder 1/4 cup finely chopped FRESH basil 2 garlic cloves, chopped 1/4 cup olive oil
Sprinkle chicken broth powder over tomatoes and mix well. Saute garlic in olive oil for about 1 minute. Add basil and saute for another minute or so. Add tomatoes and simmer for about 20 minutes, uncovered. Cool.
This can then be put in a blender and pureed. Freeze in containers.
To finish off the sauce: A fter defrosting, heat in a pot. If desired, add about 1/4 to 1/3 cup light cream. Good over bow ties. Enjoy!
