Scallops with Capers and Sun-Dried Tomatoes I recently cooked this and they are fabulous. It is a recipe from an old Bon Appetit.
Serves 2
12 sea scallops 2 Tbl olive oil 3 garlic clove 1 tsp lemon peel 2 Tbl minced sun dried tomatoes in oil 1 Tbl capers 2 Tbl fresh lemon juice 1/4 tsp thyme 1/2 stick butter
Heat oil over medium high heat. Add garlic and lemon peel 30 seconds. add scallops, probably about 8 minutes if they are large, use punch test. Remove scallops. Add tomato, capers, lemon juice and thyme. Thicken about 2 minutes. Add butter and whisk until melted. Salt. Return scallops until heated. Great!!!
