G'day Terrri, As promised :-) here are the two recipes I have for the flaked rice biscuits (cookies). Down here in Oz it is now known as pressed rice, you may find it by that name in an Indian grocery store. If not perhaps the infant flaked rice you mentioned would work - Good luck, and happy eating.
FLAKED RICE CRISPS
Cream - 6 ozs butter & 6 ozs sugar Add - 1 egg, 8 ozs self-rising flour, 1 & 1/2 cups flaked rice Then - 1 Tablespoon chopped walnuts and almond essence (to taste) Place - teaspoonfulls onto a greased oven tray & flatted with a fork. Bake - in a moderate oven till golden brown (about 10 to 12 minutes)
I can't take almond essence so I omit it from this recipe, so I am unable to say how much you may need. Possibly only a few drops I should imagine.
FLAKED RICE BISCUITS
Cream - 6 ozs butter & 5 ozs sugar Add - 1 egg & a little milk ( about 1/4 cup) stir well. Plus - 2 cups self-rising flour, mix well Lastly - 2 cups flaked rice, mix well. The mixture must not feel wet to the touch. Roll - into balls, about 1" in diameter. Place - onto a greased oven tray & flatten with a fork. Bake - in a moderate oven until golden brown.
