Microwave Pecan Brittle Recipe By: Terry Ward I have used this recipe for years. It is simple and good. You can use any kind of nuts and I sometimes add 1/4 cup chopped jalapeno peppers and a little green food coloring.
1/2 cup firmly packed brown sugar 1/2 cup sugar 1/2 cup light corn syrup 1 1/2 cups pecans 2 tablespoons butter or margarine 1/4 teaspoon salt 1 teaspoon baking soda 1 teaspoon vanilla
Grease a cookie sheet and spatula with butter or margarine. Combine sugars and corn syrup in a large microwave bowl (it will boil up pretty high). Microwave, uncovered, on high for 4 min. Stir in nuts, butter and salt. Microwave 4 more min. Remove from microwave and quickly stir in soda. It will become light and foamy. Quickly pour onto prepared cookie sheet, spreading thin. When cooled break into pieces and store in air tight container.
For an extra treat add 4 tbl chopped pickled jalapeno and a few drops of green food coloring when you add the nuts. This makes a good Christmas present. |
